I have always considered my self pretty good at the grill and have never met a pork product I didn't like. After marrying into an Italian family I fell in love with home made sausage and dried salami and dabbled in making it the old world way from time to time. But smoked meat? Not for me. Then I read an article that changed all that in one simple sentence "smoke is like salt or any other spice- you decide how much to add". After being given an Akorn Smoker as a gift in 2015, I went from someone who didn't like smoked meat to that guy you know who won't shut up about what he loves. From fine dried salami made with a nod to the past, to slow smoked meat using the latest technology and techniques, my goal is to find a way to get these hand crafted tastes that are a part of my family out to yours.
